Brownies & Cookies

 

Chocolate Shortbread

After mixing this together, work it with your hands to get it to stick together.

 


¼ cup butter, softened

¼ teaspoon vanilla

½ cup flour

¼ cup powdered sugar

1 tablespoon cocoa


 

Cream butter. Add vanilla and mix well. Add rest of ingredients and beat dough at least 3 minutes. Pat into a 9 x 4 inch rectangle. Cut into 2 inch squares place on ungreased baking sheet 1 inch apart. Prick with fork. Bake at 300 degrees for 20 minutes or till set. Cool 5 minutes before removing from pan.

 

Coconut Chocolate Chip Cookies

A different twist on chocolate chip cookies.

 


½ cup butter

¾ cup sugar

1 egg

½ teaspoon coconut extract

1 cup + 2 tablespoons flour

½ teaspoon baking soda

½ teaspoon salt

1 cup chocolate chips

½ cup flaked coconut

1 tablespoon cocoa (optional)


 

Mix all together in usual way. Drop by spoonfuls on ungreased baking sheet. Bake at 350 degrees for 12 minutes.

 

Coffee Chocolate Chip Cookies

These even taste good without the chocolate chips.

 


¼ cup instant coffee powder

2 tablespoons boiling water

1 ½ cups flour

¼ teaspoon baking soda

¾ cup butter, softened

¾ cup sugar

½ cup brown sugar

1 egg

1 teaspoon vanilla

2 cups chocolate bits

1 cup chopped walnuts


 

Mix coffee with water and let set for 10 minutes. Mix all together in usual way. Drop by spoonfuls on greased cookie sheet. Bake at 325 degrees for 12 minutes or till done.

 

Dave’s Chocolate Cookies


2 ¼ cups flour

½ cup cocoa

1 teaspoon baking soda

½ teaspoon salt

1 cup butter

1 cup powdered sugar

¾ cup sugar

1 teaspoon vanilla

4 eggs

2 cups chocolate chips


 

Mix all together. Drop by spoonfuls on greased cookie sheet. Bake 10 minutes or till done.

 

Old Fashioned Chocolate Cookies

No one ever has too many chocolate cookie recipes

 


1 cup flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup butter, softened

½ cup brown sugar

½ cup sugar

1 egg

¼ cup cocoa

½ cup quick cook oats

½ cup coconut


 

Mix all together and drop by spoonfuls on lightly greased cookie sheep. Bake in 350 degree oven for 8 to 10 minutes.

 

Quickest Peanut Butter Cookies

These are a little hard to roll into balls because the dough is stiff, but worth the effort.

 


2 cups sugar

2 teaspoons baking soda

2 eggs

2 teaspoons vanilla

2 cups peanut butter


 

Mix all together and roll into balls. Bake on lightly greased cookie sheet at 350 degrees for 11 minutes. Let stand on cookie sheet for a minute before removing.

 

Deluxe Chocolate Marshmallow Bars

Dave’s recipe

 


¾ cup butter

1 ½ cups sugar

3 eggs

1 teaspoon vanilla

1 1/3 cups flour

½ teaspoon baking powder

½ teaspoon salt

3 tablespoons cocoa

½ cup chopped nuts

4 cups miniature marshmallows


 

Mix all together except marshmallows. Spread in a greased jelly roll pan. Bake at 350 degrees for 15 to 18 minutes. Sprinkle marshmallows on top. Bake an additional 2 to 3 minutes. Spread melted marshmallows with a knife dipped in water. Spread topping over cooled bars.

Topping


1 1/3 cups chocolate chips

3 tablespoons butter

1 cup peanut butter

2 cups rice krispies cereal


 

Melt the chips, butter and peanut butter in a sauce pan. Stir in cereal. May sprinkle chopped walnuts over topping.

 

 

Cranberry Nut Bars

An easy tasty bar

2 eggs

1 cup sugar

1 cup flour

1/3 cup butter, melted

1 cup fresh or frozen cranberries

½ cup chopped nuts

 

Beat eggs till thick. Add sugar and then the flour. Stir in cranberries and nuts. Pour into a greased 8 inch pan and bake in a 350 degree oven for 50 minutes or till done.

 

No Bake Bar Cookies

Other cereals may be substituted

 


1 cup brown sugar

1 cup corn syrup

1 ½ cups peanut butter

3 cups corn flakes

3 cups Captain Crunch Peanut Butter Cereal

1 cup chocolate bits

1 cup butterscotch bits


 

Bring sugar and syrup to boil. Stir in peanut butter. Mix cereal together. Pour peanut butter mixture over cereals. Spread in 10 inch dish. Melt chocolate and butterscotch bits together and spread over top.
