Quick Breads, Muffins & Rolls

Cinnamon Rolls

Dave’s recipe.

1 2-pound bread machine white dough recipe

3 tablespoons butter, melted

3 teaspoons cinnamon

1/3 cup sugar

2 cups powdered sugar

4 tablespoons liquid French vanilla creamer

2 tablespoons butter, melted

Pam

Follow the bread machine instructions for making cinnamon rolls using the dough or manual cycle. At completion of cycle, remove dough from machine and roll out on floured surface. Smear 3 tablespoons melted butter over top of dough. Mix cinnamon and 1/3 cup sugar together and sprinkle evenly over butter. Roll up tightly, folding ends in as rolling. Stretch dough to obtain an even diameter around 18 inches long. Cut into 12 equal pieces. Put in a foil lined 9x13 inch glass baking dish which has been sprayed with Pam. Let raise 40 minutes and then bake at 350 degrees for 20 minutes or till golden brown. Remove from dish by lifting out foil. Frost with a mixture of powdered sugar, 2 tablespoons melted butter, and creamer.

Never Fail Cinnamon Rolls

Dolly William, a volunteer at the Andbe Home, gave me this super easy recipe. She says you CAN’T goof with is one.

5 cups flour

2 ½ cups warm water

2 packages yeast

1 box white or yellow cake mix

cinnamon sugar

butter

1 cup brown sugar

½ cup water

1 tablespoon butter

Make a sauce by bringing brown sugar, ½ cup water and 1 tablespoon butter to a boil. Cook till sugar is melted. Let cool and pour into 9 x 13 inch pan. Mix flour, water, yeast and cake mix together. Let raise once. Spread dough out with hands (it will be sticky, but Dolly says don’t add additional flour unless absolutely necessary). Spread cinnamon sugar and butter over dough and roll up. Cut into ¾ inch slices and place in pan with the sauce. Let rise till pan is full.  Bake at 350 degrees till done. Dolores & I found that this recipe fills two 9 x 13 inch pans, so would suggest that the sauce recipe be doubled.  Dolly uses a Jif cake mix when wanting to half the recipe.
